Introduction

Made to correlate with my ALCAT eating plan based on my own blood reactions to foods. It is part of a 4 Day Rotation Eating Plan. Please adapt to your own nutritional needs. Cinnamon would probably taste better, but that is listed for me on DAY 2, not DAT 4. Darn! And I might even use cinnamon even if it the "wrong " day. I adapt this eating plan. Ingredients

    Olive oil 4 tbsp.
    Rice milk (or soy milk)
    Gr. nutmeg 1/8 tsp. or to taste
    Grated zest of lemon and/or orange equal to one fruit
    Orange juice concentrate thawed 1 tbsp.
    Buckwheat flour 1/4 cup
    Amaranth flour 3/4 cup
    Stevia or Truvia sugar substitute equal to 8 tablespoons sugar
    Baking soda 1/4 tsp.
    Baking powder 1 and 1/2 tsp
    Salt 1/4 tsp.
    Walnuts chopped and toasted (to taste)
    Pecans chopped and toasted (to taste)
    Granulated sugar/nutmeg mixture topping
    before baking to taste

Tips

As of 10/25/14 I have not actually made these. I will update later.

NOTE: Stevia equal to 8 tblsp. of sugar. I could not make the calculator accurate. Sorry about that.

NOTE: the amount of nuts you use will greatly alter the calorie count and the amount of fats. I wrote approximate nut amounts.

NOTE: I want to use unsweetened and nonfat rice milk, but that was not listed in the SP nutrition calculator.


Directions

1. Mix wet ingredients: vegetable oil,rice milk. Whisk together.
2.Add flavorings: nutmeg, grated zest of orange and or lemon, cooked and cooled and pureed pumpkin, defrosted orange juice concentrate. Stir well.
3.Combine dry ingredients: buckwheat and either rice or amaranth flour, baking powder, baking soda, salt.
4. Stir the dry ingredients into the wet ingredients briefly just until incorporated.
5. Add stir ins: chopped walnuts and/or pecans.
6. Spoon into Pam sprayed paper mugging cups. Sprinkle with a little granulated sugar and nutmeg to taste.
7. Bake: 375 degrees until toothpick comes out dry or with just a few moist crumbs. Typically 15-25 minutes for muffins. Longer for loaves.

Serving Size: Makes 6 muffins.
