Ingredients

    4 pork chops
    1 tablespoon olive oil
    1 pkg country gravy mix

    Mashed Potatoes:
    3 medium potatoes, peeled and quartered
    1-1/2 tbs butter
    1/3 cup low-fat milk
    salt and pepper to taste

Directions

Heat the oil in the Instant Pot on Saute setting. Fry the pork chops 5 minutes per side, or until well browned.

Remove meat and prepare gravy mix in the pot, according to package directions. Place meat back in the gravy.

Place potatoes on a steam rack on top of the meat. Lock the lid and set to cook on manual setting at high pressure for 10 minutes.

Let the cooker's pressure naturally release for 10 minutes before quick releasing any remaining pressure.

Mash potatoes with butter, milk, and salt and pepper.
