Introduction

Ingredients


    1 cup Butter, unsalted,
    1 cup Dark Brown Sugar, Pure Cane Sugar,
    1/2 cup Granulated Sugar
    1 Egg, fresh, whole, raw, large
    1 Egg yolk, fresh, large
    1 Tbsp Vanilla extract, imitation, alcohol
    1 3/4 cup *Flour, King Arthur All Purpose
    Unbleached White
    1/4 cup *Flour, King Arthur Unbleached White
    Whole Wheat,
    1 cup Oatmeal (plain), 1 cup dry
    1 tsp Baking Powder, (remove)
    1 tsp Baking Soda, 1 tsp (remove)
    3/4 tsp Salt,
    3 cups Chocolate chips, Hershey's milk chocolate
    2 Tbsp Flax Seed (ground into meal) - Hodgson Mill Milled Flax Seed

Directions

Beat butter and sugars, beat in egg and egg yolk and vanilla. Then add the remaining dry ingredients, but not the chips. Mix until thoroughly incorporated and scraping bottom and sides of bowl. Stir in chips. Scoop by 1 1/2" balls, roll in flax seed meal, and place on ungreased (or on parchment paper) cookie sheet leaving 2" between each one. Bake in preheated 325 degree oven until golden brown with darker edges, 12 - 15 min. Remove from oven and when firm enough to handle, transfer to cooling rack. Yields about 50 2 3/4" to 3" cookies.
