Ingredients

    1.5 lb pork sirloin roast
    2 med red bell peppers
    1/3 cup prepared teriyaki sauce
    2 tbsp rice vinegar
    1 tsp red pepper flakes
    2 cloves garlic - minced
    1/4 cup pb2
    1/2 cup chopped green onions
    1/3 cup lite coconut milk
    2 limes - cut into wedges

Directions

slow cooker - low for 8-9 hours, high for 4-4.5 hours.

mix all ingredients except for the pb2, coconut milk. cook as instructed. when finished, take meat out and shred, place back in juice and mix remaining ingredients. squeeze limes over individual servings and garnish with green onion. serve with rice - not included in nutritional info.
