Ingredients

    2 c. Egg Beaters or other egg substitute (not whites)
    1 c. diced ham
    1/2 c. chopped red pepper
    1/2 c. chopped green onion
    1 c. Kraft free shredded cheddar cheese

Directions

1. Preheat oven to 400 degrees.

2. Combine Egg Beaters, ham, red bell pepper, green onion, and cheddar cheese in 9x9-inch baking pan

3. Bake for 25 minutes, until fork inserted comes out clean.

    This recipe is so easy! I did add sliced mushrooms, which I sauteed (with the green onion) in about a tsp of olive oil before adding to egg mixture. I then sprinkled black pepper on top before cooking. Thanks for the recipe! - 6/18/12

    Incredible!
    FANTASTIC!! I omitted the ham & added chopped fresh spinach,red, yellow/green peppers,fresh herbs/garlic. I pack it along with my steel cut oatmeal and have them both for breakfast when I arrive to work!! It lasts the whole week. hubby snuck some. Going to the recipe tomorrow. - 3/26/13
