Ingredients

    Extra Virgin Olive oil
    Fresh Onion
    Garlic cloves
    Ground Cumin
    Chili Powder
    Freshly Ground Black Pepper
    Canned Black Beans
    Canned Diced Tomatoes
    Chicken Broth
    Fresh Roasted and skinned Pumpkin
    Dry Cooking Sherry

Directions

Cut and seed Pumpkin and roast until tender. Remove, cool, and remove skin. Puree and set to the side. Cut onions and garlic and cook in olive oil, adding spices to the mix. When tender, add two cans of black beans and onion/garlic mixture and puree. Combine bean mixture, pumpkin, and broth in a large cooking pot. Cook uncovered for approximately 30 minutes. **Garnish with Sour Cream if desired.
