Ingredients

    1 1/4 c. rice flour
    1 T baking powder
    1/2 tsp. baking soda
    1/2 tsp. cinnamon
    1/2 tsp. salt
    1/2 c. applesauce
    1/2 c. oil
    3 tsp. stevia blend (or 3/8 tsp. stevia powder)
    3/4 c. rice milk
    1 c. carrots, grated
    4 medjool dates, pitted and chopped
    1/2 c. walnuts, chopped

Directions

1. Mix flour, baking powder, cinnamon, salt in a large bowl. Add stevia. Set aside.

2. In a mixing bowl beat the eggs. Add applesauce, milk, and oil. Stir in carrots, raisins, and add nuts.

3. Gradually fold the flour mixture into the egg mixture until just moistened.

4. Spoon batter into paper muffin cups or greased muffin tins. Bake at 375 degrees F. for 20-25 minutes or until muffin tops spring back from touch. (check at 10 minutes).
