Introduction

The original recipe my husband's grandmother made used all white flour, a full cup of oil, and 2 cups of sugar. I modified it as much as I could and still satisfy my husband. You could use more applesauce and substitute another sweetener for the sugar to reduce the fat and calories. Ingredients

    3/4 cup canola oil
    1/4 cup unsweetened applesauce
    1 1/2 cups sugar
    2 eggs
    1 teasp. vanilla
    1 cup all-purpose unbleached flour
    1 1/2 cups whole wheat flour
    2 teasp. baking powder
    1 teasp. salt
    1 teasp. cinnamon
    1 cup pecans, chopped
    3 cups diced baking apples
    1 cup raisins, black or golden or a combination of both

Directions

Heat oven to 325 degrees. Spray a 9x13 baking dish.

In a large bowl, mix together the oil, applesauce, and sugar. Beat in the eggs and vanilla.

Sift together the flours, baking powder, salt, and cinnamon. Stir this into the oil mixture. Stir in the nuts and fruit. The batter will be very thick.

Put batter in baking dish and bake for 45 minutes or until lightly browned. Do not overbake!
