Ingredients

1 1/4 c almond meal
1/4 c coconut flour
1/4 c wide shred coconut (unswtnd)
1 T flax meal
3 pkts of Stevia
2 large eggs
pinch of salt
1/4 t baking soda
1/2 c almond milk
2 T butter
1/2 t coconut extract
1/2 t almond extract
Tips
If the batter seems too thick you can thin it with additional almond milk or water.
Directions
Mix dry ingredients
Melt butter in frypan
mix eggs and almond milk in to dry
Add melted butter and heat pan to medium.
Add batter in cake size blobs. Give it a shake to smooth it out. Flip when golden on bottom. You can add a few blueberries just before flipping if you like. Serve with maple syrup or Mrs. Butterworth's no sugar added syrup
