A home-made biscotti cookie A home-made biscotti cookie
Number of Servings: 60

    1 1/2 Cups Flour
    1/3 Cup Cocoa Powder
    1 Cup Splend Granular
    1/2 tsp baking powder
    1/2 tsp baking soda
    6 Large Eggs
    Pinch Salt
1 Tablespoon Instant Coffee powder (like Nescafe)
    3/4 Cup White Chocolate Chips
    3/4 Cup Semisweet Chocolate Chips
    Powdered Sugar (for rolling)

Preheat oven to 350
Mix dry ingredients
Stir in eggs (start with 3, then add one egg at a time until dough is firm but not too wet. May not need all 6 eggs as my dough came out a touch too wet for my preference when I used all 6)
Seperate dough into four parts.
Roll each part into a long log and place on parchment paper-covered baking pan, two logs to a pan, and bake for 15 minutes
Remove from oven, cool, and reduce oven temp to 300.
Slice into rounds (or on the bias for a more traditional length). I got 60 1/2" rounds.
Bake for another 10-15 minutes at 300 until dry/toasted.

Number of Servings: 60
