Introduction

Ingredients

    1 3/4 cup AP unbleached flour

    3/4 teaspoon baking soda

    1 1/4 teaspoon cream of tarter

    1/2 teaspoon salt

    2 1/4 tbsp shortening

    2.4 tbsp (.15 cup) Applesauce, unsweetened

    10 tbsp + 2 tsp (32tsp) Splenda

    1/2 cup Egg beaters

    2 med overripe Bananas


Directions

Heat oven to 350 F degrees. Grease mini cupcake pans and set aside. Cream banana's, splenda, applesauce, and shortening until creamy. Add eggs, cream of tarter, baking soda. Add flour slowly until completely incorporated. Pour into mini pans, leaving room at top for expansion. Bake for 20-30 minutes, or until golden brown. Makes approximately 36 mini muffins or 2 loaves.
