Number of Servings: 4


    16 jumbo shrimp, peeled & deveined
    2 tsp. olive oil or spray
    1 tbls. chopped shallot
    3 cups raw baby greens, escarole or mustard greens, chopped
    2 cups low fat chicken or fish stock (IKitchen Basics is best)
    3 oz. lemon juice
    1/2 can diced tomatoes with basil, oregano & garlic
    8 oz. wheat blend linquine
    Dash hot sauce
    Salt & pepper to taste


Saute shallot in oil or spray for 1 minute. Add greens and saute for about 2 minutes (adding a little stock to help with sticking). Add tomotoes and cook for 3 minutes. Add balance of stock and bring to a boil. Add linquine and cook for 8 minutes. Add shrimp, hot sauce and lemon juice. Cook for about 3 minutes. Salt & pepper to taste.
Makes 4 large servings. Serve with crusty bread or flatbread to soak up juices.

* May substitute quick cooking brown rice for linquine and make into a thick soup/stew.
