    1/2 c canola oil
    1 (16 oz) package frozen spinach
    2 eggs
    1 Tbl salt
    1 Tbl pepper
    3 Tbl bacon bits


Lightly scramble eggs in a small bowl.

In a skillet, combine the spinach and eggs and add only as much oil as needed. Salt and pepper to taste and add bacon bits after cooked through. Serve hot.
