Ingredients

    2 tsps. olive oil
    1 cup sliced fresh mushrooms
    1/2 cup chopped onion
    2/3 cups rice
    14-16 ounces of chicken broth
    1/2 cup shredded carrot
    1 tsp. dried marjoram
    2 cups small broccoli flowerets

Directions

Cook and stir the mushrooms and onion in hot oil until tender. Stir in the rice and cook while stirring for 2 minutes, until rice is toasted.
Stir in the chicken broth, carrot, marjoram, and pepper. Bring to boil, put lid on and simmer until rice is almost done. Stir in broccoli and cook another 5 minutes or until rice is done.
