Introduction

Ingredients

    6 large baking potatoes, cooked
    2 or 3 yellow onions, chopped
    2 carrots, chopped or sliced
    6 garlic cloves, whole
    1 tablespoon salted butter
    4 cups fat-free chicken broth
    3 cups cauliflower florets

Directions

Scrape flesh from baked potatoes. In pot over medium heat, cook onions, carrots, and garlic in butter 6 minutes or until tender. Add broth, cauliflower, and potato flesh. Bring to a boil. Cover and cook at medium for 10 minutes. Puree in batches in food processor until smooth. Garnish as desired.

Serving Size: Makes 16 1-cup servings
