Feta is good in such small quantities that this tastes like an indulgent treat when it is really a very reasonable and filling option for breakfast or lunch. Ingredients

    1/3 cup egg whites (roughly 3)
    2 tbsp low-fat feta cheese
    2 tbsp shredded spinach
    1/4 cup carrot slaw (carrots, broccoli, and red cabbage cut into thin, small pieces)

Tips

The feta makes up the entire fat content, so although I think it really makes the flavour fantastic, you could omit it for a fat-free variation with only 50 calories.


Directions

Pour egg whites into a nonstick pan (in a good pan, no cooking spray is required) over medium heat. Add cheese, spinach, and carrot slaw.

Cook until the underside is firm and slightly brown, then flip and cook the other side. Serve and eat immediately.

Serving Size: Makes one generously-sized omelette.
