    400g wholemeal flour
    100g white flour
    1 cup rolled oats
    2 tsp salt
    2 tsp sugar
    1 sachet dried yeast
    mix of pumpkin, sunflower, poppy and sesame seeds
    300ml hand hot water


Makes 2 medium loaves - 10 thick slices each
Put the dry ingredients into a large bowl, except the yeast. Make a well in the centre and pour in the yeast. Add the water bit by bit until the mixture becomes a dough. Kneed the dough on a floured surface for 10-15 minutes until it is smooth. Place in a floured bowl and cover with an oiled piece of cling film. Leave for 30 mins to 1 hour to rise. Knock the risen dough back down and kneed for a few minutes before shaping. Cover again with oiled film and allow to rise for at least 30 minutes. Bake in a medium oven until the loaves sound hollow when tapped (approximately 25 minutes).
