A Romanian light dumpling soup. Very yummy and low calorie. A Romanian light dumpling soup. Very yummy and low calorie.
Number of Servings: 15


    ½ kg. beef or chicken
    2 ½ L. water
    5 small potatoes
    2 parsley roots
    3 parsnips
    1 bunch of celery or celery root
    4 small onions
    8 carrots
    ½ kg. meat bones (optional)

    2 eggs
    ¼ t. salt
    1 c. flour meal


To prepare the soup base: In a large pot, add the meat, bones and water and bring to a boil over a medium-high flame. Remove any foam that accumulates on the surface. Reduce the heat and simmer. Meanwhile, rinse and peel the potatoes, parsley roots, parsnips, celery, onions and carrots. Add all of the vegetables to the pot, except the potatoes.
Once the vegetables are tender and the meat has completely cooked through, add the potatoes. Continue cooking the soup base until the potatoes are tender.
To prepare the galuste: In a bowl, beat the eggs. Add the salt and flour meal until the mixture is doughy. Drop the dough by the spoonful into the boiling soup mixture. The dumplings are done 10 minutes after they rise to the surface. Serve hot.
