    10 Jalapenos
    6 cloves garlic
    1/4 liter vinegar
    1/4 tsp cumin
5 cloves whole (or 1/4 tsp ground)
    dash salt
2 lbs pork meat sliced thin
    1 large onion
    fresh cilantro
    2 limes

serves 4

Before cooking: Slice pork meat into thin slices.

Prepare Marinade: Take seeds out of jalapenos, put them into food processor along with garlic, cloves and cumin. Process until all ingredients are finely minced. Boil the ingredients with vinegar until they make a heavy paste. Stir often to ensure it does not burn.

Once marinade has cooled down, apply it to the steaks, placing one piece on top of the other. Store in refrigerator for 6 hours, or overnight.

When ready to prepare meal:

Chop onion, cilantro and limes, set aside.

Cut the pork into small pieces, fry in frying pan until it is well roasted. You could also grill the steaks on the grill outdoors and chop it up afterward.

Some people like to cook this dish with pineapple, but I did not include that in the instructions as I do not use it.

Serve with chopped cilantro, onion and lime.
