Ingredients

    6 oz dry whole wheat pasta
    0.5 tbsp Extra Virgin Olive Oil
    3 slices Smoked Bacon, chopped
    0.5 cup Onions, chopped
    2 clove Garlic, sliced
    1 hot chili, chopped
    2 cup Zucchini, sliced
    150 gram low fat cooking cream (15%)
    4 tbsp Parmesan Cheese, grated
    salt & pepper to taste

Directions

1. Bring big pot of water to a boil. Once boiling, add app. 0.5 tbsp salt and dry pasta, cook according to pack instructions until al dente.

2. While cooking pasta, heat oil in frying pan on medium heat, once hot add bacon and cook app. 4 mins, add onion, and cook 2 mins more until translucent. Add garlic, chili and zucchini and cook until zucchini is soft and colored. Add cooking cream and Parmesan, and cook until a bit thickened.

3. Once pasta is al dente, drain and add to pan with sauce, along with app. 0.25 cup of the cooking water. Season with salt and pepper to taste. Divide between four warmed plates and serve immediately.
