Introduction

Very versatile cookie recipe that can be made into chocolate chip or cookie cutter... etc
I needed a Christmas cookie to challenge the warm chocolate chip cookies surrounding me. :) I used a mixture of Palm/Coconut Sugar and Granulated Sugar to cut the *Glycemic Index. I used Pilsbury's ready Gluten Flour Mix. ** Make your own at link below.

Ingredients

    (conversions)
    13.5tsp (3/8c or 54g) coconut sugar
    3/8c Granulated Sugar
    OR
    3/4c sugar

    1/2c (1stick or 112 grams)Unsalted Butter
    1 large egg
    1/2tsp Vanilla extract
    1.5c Gluten Free Flour Blend **
    (I used Pillsbury Best Multi Purpose Gluten Free Flour Blend which has xanthan gum included)
    1/2tsp Baking Soda
    Chocolate Chips or dark chocolate pieces optional

Tips

*Coconut sugar is known for low GI. So still high carbs (1.5g (.37tsp sugar)/serving) but worth it. To me. :)

**Gluten-Free Flour Blend:

Combine 2 cups rice flour, 2/3 cup potato starch, 1/3 cup tapioca flour and 1 teaspoon xanthan gum. Use appropriate amount for recipe; store remainder in container with tight-fitting lid. Stir before using.


Directions

Heat oven to 400ºF.

-Combine sugar, butter, egg and vanilla in medium to large size bowl.
-Beat at medium speed, scraping bowl often, until well mixed.
-Add gluten-free flour blend and baking soda; beat at low speed, scraping bowl often, until well mixed.
-For more rise let sit for 10m
-Shape dough into 1-inch balls
-Roll in gluten-free decorator sprinkles or sugars as desired.
-Place 2 inches apart onto ungreased cookie sheet(s) or parchment paper on cookie sheet(s).
-Flatten slightly with bottom of glass dipped in sugar or a spoon.
-Add chocolate chips/pieces on top or any other like sprinkle brown sugar
Flatten a larger piece and cut with cookie cutter is desired (make sure to press all the way through, batter sticks a little to outside edges)
-Bake 5-8 minutes or until edges are lightly browned.
