Introduction

Every year we make lentil soup. Lentils resemble coins and it is said that by eating them on New Years Day it will bring financial prosperity in the coming year. Every year we make lentil soup. Number of Servings: 12

Ingredients

    1 tablespoon Olive Oil
    3 cloves Garlic, minced
    1/2 Onion, rough chopped
    3 stalks Celery, rough chopped
    4 large Carrots, cut in equal sized pieces
    1 package Bratwurst, casing removed
    1 pound lentils
    16 cups Chicken Broth
    1 teaspoon Montreal Steak Seasoning
    1 can Diced Tomatoes & Green Chilies
    1 teaspoon Thyme
    1 teaspoon Celery seed
    3 whole Bay Leaves

Tips

Tip: I drain the diced tomatoes and chilies then blend to a puree before adding with the rest of the ingredients. This is just personal preference.


Directions

1. Saute the garlic, onion, and celery in olive oil until onion just begins to turn translucent. Add the sausage and cook until there is no pink showing.

2. Add the remaining ingredients and bring to a boil. Reduce heat and simmer until carrots are cooked to your preference.

3. ENJOY!
