This takes a bit of time to prepare, but is well worth it. It is very high in fibre and low in fat. It can easily be customized for taste and ingredients. Ingredients

1/2 cup chopped onion
1/2 cup chopped bell pepper
1/2 cup chopped carrot
1/2 cup chopped celery
1 large can of cooked lentils
2/3 cup tomato sauce
3 tablespoons ground flax seed
1 cup All Bran cereal, ground to make 1/2 cup crumbs
1/2 cup cooked quinoa or brown rice
1 egg
1 tablespoon oregano
1 tablespoon garlic powder
Salt and pepper to taste
2 tablespoons ketchup or barbeque sauce
Directions
Finely chop the vegetables or place larger chunks into a food processor.
Mash the cooked lentils to form a paste and set aside.
In a non-stick pan, cook vegetables until tender.
Add cooked vegetables, mashed lentils and the rest of the ingrediants, except ketchup, in a large bowl. Mix thuroughly.
Spoon into a small greased or non-stick loaf pan. Press to form a loaf. Spread ketchup of barbeque sauce on top. Bake uncovered for 35 minutes or until firm.
This will make approximately 8 slices that are 1/2 inch by 1 1/2 inch.
