Ingredients

    Sweet potato
    Yellow Sweet Corn
    Celery
    Red Onion Raw
    Low Sodium Vegetable Broth
    Coconut Milk
    Mushroom
    Carrot
    Curry powder
    Ground tumeric
    Flax Seed

Tips

Add a dallop of fat free sour cream on top for extra creaminess (not included in nutritional count)


Directions

Cook onion & celery in broth until tender.
Add potato, carrot, celery, flax, tumeric & curry.
Cook until potatoes are tender.
Put soup into blender on high for 1 minute.
Return to pot & add coconut milk.
Simmer 10 minutes.
