Introduction

Ingredients

    Meat Layer:
    1/2 lb extra lean ground beef
    1 large carrot, diced
    1/2 c sliced mushrooms
    1/2 white onion, diced
    2 cloves garlic, minced
    1 bunch spinach
    750 mL tomato sauce
    oregano, basil, S&P to taste

    Cheese Layer:
    500 g ricotta cheese
    1 large egg
    1 clove garlic, minced
    oregano, basil, S&P to taste

    1 large zucchini
    2 c mozzarella
    1/4 c parmesan

Tips

Double the zucchini if you like those layers thicker. It's the cheeses that are the indulgence in this dish, so reduce the amount and/or use low-fat or non-fat to change the nutritional values.


Directions

Preheat oven to 350F.

Remove stems from spinach and chop roughly.

Reserve 1/4 c of tomato sauce.

Scramble fry meat, mushrooms, carrots, and onion over medium heat until pink is almost gone from meat. Add garlic and fry another couple of minutes. Add tomato sauce and spices, and bring to a simmer. Reduce heat, stir in spinach, and cover.

Mix ricotta cheese, egg, garlic, and spices.

Slice zucchini lengthwise - a mandolin is the best tool for this.

Grate mozzarella and parmesan; loosely mix.

Lightly cover the base of a 9x9 pan with the reserved tomato sauce. Layer as follows:
1 - one layer of zucchini strips, salted
2 - all of ricotta cheese mixture
3 - 1/3 of grated cheese mixture
4 - one layer of zucchini strips, salted
5 - all of meat mixture
6 - one layer of zucchini strips, salted
7 - remaining grated cheese mixture

Bake uncovered for about 30-45 minutes.

Serving Size: makes six 3x4.5" pieces
