    *3 Slices of Deli Honey Ham, Diced
    *1/4 C. Italian Blend Shredded Cheese
    *1-4 oz. can mushroom pieces,
    rinsed, drained and chopped fine
    *4 Tbsp. diced onion
    *4 Tbsp. diced red bell pepper
    *10 large eggs, beaten


You can add whatever vegetables combinations you prefer. You can change the meat or cheese type, or omit it all together. After cooling completely, these can be wrapped individually in plastic wrap and then placed in freezer safe container to freeze. Simply warm them for 30 seconds or so to reheat and go!


Preheat oven to 375 degrees. Line muffin tin with 2 liners. Divide ham evenly between cups, add 1 tsp. cheese to each cup, add 1 Tbsp. diced mushrooms to each cup, add 1 tsp. each of diced onion and bell pepper. Beat eggs adding salt & pepper if desired. You may add a bit of water (no more than 1/4 c.) to egg mixture if desired. Fill each cup with egg until not quite full, dividing egg mixture evenly among cups. Bake for 20 to 25 mins.
