    2 - 99% fat free boneless, skinless chicken breasts
    2 - 1 oz slices 50% reduced fat tomato basil cheddar (I used Cabot's)
    2 - tsp McCormick's French Herb Roasting Rub

    No Fat Cooking Spray (Pam)
    toothpicks (soaked in water)


Makes 2 servings

Pre heat oven to 350.
Cut pockets into the chicken breasts.
Break up the slices of cheese and insert into the pockets.
Close the pockets with the pre-soaked toothpicks.
Spray each side of the chicken with the cooking spray.
Coat the chicken breasts with the roasting rub.
Bake for 30 - 35 minutes.
