Number of Servings: 12

Ingredients

    1 cup flour
    1-1/2 tsp. baking powder
    ½ tsp. baking soda
    ½ tsp salt
    ½ cup unsweetened applesauce
    1/3 cup brown sugar (I use raw sugar)
    3 T. molasses
    4 egg whites
    1 cup milk
    1-1/2 cups wheat bran (let stand for 15 min)
    1 cup of blueberries

Directions

Combine & set aside: 1 cup flour
1-1/2 tsp. baking powder
½ tsp. baking soda
½ tsp salt

Mix together: ½ cup oil
1/3 cup brown sugar (I use raw sugar)
3 T. molasses
2 eggs
1 cup milk

Add to liquid mixture: 1-1/2 cups wheat bran (let stand for 15 min)

Add flour mixture to bran mixture until all flour is moistened. Stir in 1 cup of blueberries. Bake at 400 degrees for 20 minutes.
