    112 g ham, diced
    1 tsp olive oil
    220 g onion
    280 g chopped spinach, washed and drained well
    1 egg, slightly beaten
    40 g seasoned bread crumbs
    1/2 tsp. garlic salt
    500 g chicken breasts, skinned, and boned(about 4 breasts).
    1 Salt and pepper
    2 tbsp. olive oil
    4 Lemon wedges


Heat the oil and cook onion and until soft. Add ham, stir for 2-3 minutes. With slotted spoon, transfer bacon and onion to a large bowl. Add spinach, egg, bread crumbs, and garlic salt; toss gently. With a small, sharp knife, cut a pocket in the thick side of each breast. Stuff lightly with spinach mixture and close with wooden toothpick.
Season lightly with salt and pepper. In same pan, over medium heat, melt butter. Add chicken and cook, turning for about 15 minutes (or until meat in thickest portion is no longer pink when slashed). Serve with lemon wedge to squeeze over top
