Ingredients

    Cooked Chickpeas - 1 cup
    Cooked Red Kidney Beans - 1 cup
    Chopped Celery - 1/2 cup
    Chopped Onions - 1/2 cup
    Chopped Bell Peppers (yellow or red) - 1/2 cup
    Grated Carrots - 1/2 cup
    Chopped Cucumber - 1/2 cup
    Halved Cherry Tomatoes - 1/2 cup
    Salt - 1 tsp or to taste
    Chilli Powder - 1/2 tsp or to taste
    Lemon Juice - 2 tsps or to taste

Directions

Add together the first 8 ingredients in a large mixing bowl. Make a dressing by adding together salt, chilli powder and lemon juice and drizzle over the salad. Let it chill for a couple of hours to infuse the flavours and then enjoy!
