A great springtime stew, hearty yet bright. This recipe, while similar to another SparkRecipe is for a larger quantity and has directions which will also work for that recipe. Ingredients

2 T. olive oil
1.5 onions, chopped
20 oz. Italian sausage, casings removed
2 T. tomato paste
3 15 oz. cans garbanzo beans, drained & rinsed
1 c. fresh parsley, chopped
2 c. fresh cilantro, chopped
4 c. Emeril's chicken stock or similar low-fat stock
2 10 oz. packages frozen spinach
Directions
1. Soften onion in olive oil over medium heat, approx. 5 mins.
2. Bring heat to medium-high & add sausage, stirring constantly to produce sausage crumbles.
3. Add tomato paste & allow to cook for 2 mins. to carmelize & marry the flavors.
4. Add fresh herbs & allow to wilt, approx 1 min.
5. Stir in garbanzo beans & cover with broth. Bring to a boil.
6. Once at a full boil, add spinach and stir to incorporate. Return to a full boil.
7. Season to taste. I added some red pepper flake, parmesan and sherry to mine.
Yield: 8-1.5 c. servings
