    1 pkg eggroll wrappers
    1 16oz pkg coleslaw mix (green/red cabbage/carrots)
    1 chicken breast, cooked and shredded
    salt/pepper to taste
    1 T rice vinegar (optional)
    1/4 cup minced mushrooms


Chop coleslaw mix until farely fine. Mix all ingredients together. Place about 1/4 c in center of wrappers. Roll diagonally like a burrito, folding in the sides and quite tightly. Seal edges with a little water. Fry in small amount of vegetable oil. Drain well. Makes 15 large eggrolls. Serve with Fried rice and salad.
