Ingredients

    *Italian Sausage, pork, 5 link, 4/lb
    *Peppers, sweet, red, fresh, 4 medium
    Cous Cous, .75 cup
    Onions, raw, 1 cup, chopped
    Garlic, 3 clove
    Chicken Broth, 1 cup (8 fl oz)
    Mozzarella Cheese, part skim milk, 6 oz
    Parmesan Cheese, shredded, 4 tbsp
    Olive Oil, 1 1tsp
    Canned Tomatoes, 1.875 cup

Directions

Preheat oven to 400

Heat Oil over MED heat
Add Onions and cook 'til translucent
Add Garlic and cook for 1 more min.
Add Sausage and brown
Add Tomatoes and bring up to temperature
Add Broth and bring up to temperature
Add CousCous and remove from heat

Half peppers lengthwise and fill with mixture
In a large baking dish, add some water then place the peppers skin side down
Fill peppers with mixture
Cover dish with foil and place in the oven for 35-40mins

Remove from oven, add cheese and return to oven uncovered for another 10-15 mins. Until Cheese is browned.

Eat.
