Ingredients

    1 onion, sliced thin
    1/4 cup fish sauce
    2 carrots
    1 lb beef for stew
    3 cups beef broth
    1 tsp cinnamon
    2 whole star anise
    1 tbsp unsalted butter
    1 tsp coconut oil

Directions

Melt butter and saute onions, then carrots. In separate container, brown meat with oil and add to onions and various. Add cinnamon and star anise. Stir for one minute. Add fish sauce and stir for 2 minutes. Add broth, bring to book and then reduce to simmer for 1 hour.

Serving Size: makes 3 2 cup servings
