Introduction

One of my favorite side dishes. One of my favorite side dishes.
Number of Servings: 1

Ingredients

    2 tbs canola oil
    1/2 cup finely chopped onion
    2 cups okra, sliced (1/2 lb)
    2 cups peeled, diced tomatoes
    2 cups corn
    1 tsp salt substitute
    1/2 tsp paprika
    1/4 tsp curry powder or cumin
    1 tsp stevia sweetener (or 2 tsp brown sugar)

Tips

Delicious over rice.
You can add some Chia seed (1/4 cup) to add protein


Directions

Saute onions in oil until brown.
Add okra and saute for 5 minutes.
Add remaining ingredients, simmer 10 minutes.

Serving Size: Makes 6 1-cup servings
