    8 chicken thighs and drumsticks
    1/4 cup fresh lemon juice
    2 T olive oil
    1 clove garlic, minced
    l T. chopped fresh oregano of 1 tsp. dried
    salt and freshly ground pepper to tast


Arrange the chicken pieces, skin sides down, in a baking dish. In a small bowl, whisk together the lemon juice, olive oil, garlic, oregano, salt, and pepper. Pour over the chicken. Let stand for 1 hour.
preheat an oven to 400F . Roast the chicken for 30 minutes. Turn the pieces skin sides up and continue to roast until browned and the juices run clear when a thigh is pierced, 30-45 minutes.
Transfer the chicken to a platter, cover loosely with foil, and keep warm. Pour the panb juices through a fine-mesh sieve into a bowl and skim off the fat. Pour the juices over the chickenb and serve. Makes 8 pieces
