    1/4 cup vital wheat gluten
    1/4 cup rolled oats
    1/2 cup whole wheat
    1/2 cup white flour
    1 1/3 cup brown sugar, loosely packed
    1/3 cup butter
    1 tsp salt
    1 tsp baking powder
    1 egg
    1/2 cup milk
    1 tbsp vanilla
    1/4 cup pumpkin puree
    1/4 cup safflower oil
    3/4 cup chocolate chips


Makes 1 dozen muffins

Preheat oven to 375F.

1. Cream the butter & sugar til the mixture is light and airy.
2. Add the egg and cream until the mixture is light and airy.
3. In a separate bowl combine all the dry ingredients. In another bowl combine all the remaining liquids.
4. Alternating dry and liquid ingredients, starting with dry and ending with liquid, add the mixes in 2 additions to the butter mixture.
5. Spoon the batter into greased (or paper liners) muffin pans about 2/3 full. Bake at 375F for 20-30 minutes or until toothpick inserted comes out clean.
