    1 tablespoon unsalted butter
    1 large sweet onion, diced
    1 tablespoon curry powder
    1/4 teaspoon black pepper
    2 medium yams or sweet potatoes (about 1.3 lbs.), peeled and diced
    4 cups reduced-sodium chicken or vegetable broth or stock
    1/2 cup half-and-half


Melt butter in saucepan over medium heat. Add onion, curry powder, and pepper. Stir until aromatic, about 5 minutes. Add yams and broth. Simmer, covered, until vegetables are tender, about 30 minutes.

Transfer to blender in batches and puree until smooth. Stir in half and half until thoroughly combined. Season to taste.
