Ingredients

3 teaspoons cream cheese, divided
1 tablespoon ricotta
1/4 cup finely ground almonds
1 egg
1 tablespoon butter
1 teaspoon vanilla
2 packets Splenda
1/2 teaspoon baking powder
pinch of salt
pinch cinnamon
pinch nutmeg
Directions
1. Grind the almonds in the blender.
2. Warm the butter, ricotta, and 1 teaspoon of cream
cheese in the microwave and blend well with a fork.
3. Add the egg, the butter mixture, vanilla, spices,
baking powder, and 1 packet of Splenda to the
blender with the almonds.
4. Blend on high until well mixed and looks similar to
whole grain pancake batter.
5. Pour into two silicone baking cups or paper baking
cups in a microwave safe muffin pan.
6. Mix remaining cream cream, 1 packet of Splenda
and a smidge of vanilla extract in a bowl.
7. Push one teaspoon of cream cheese mixture into
each muffin.
8. Microwave for 1 - 2 minutes or until set. The top will
still be gooey - do not over bake.
9. Let stand in microwave for about 3 minutes.
