Introduction

I created these for my son, who was sick of eating eggs every morning. They were so fluffy and delish! I was so pleasantly surprised. I created these for my son, who was sick of eating eggs every morning. They were so fluffy and delish! I was so pleasantly surprised.

Ingredients

    1/4 cup almond Meal, Trader Joes
    1 Egglands Best Extra Large Egg
    1 teaspoon *Coconut Oil Trader joe Organic
    1/4 tsp Baking Soda
    *Splenda
    2 tbsp Flax Seed
    2 oz Almond Breeze Almond Milk unsweetened
    Salt, 1 dash

Directions

Mix ingredients together (dont over mix). Let batter sit for about 5 minutes (to allow baking soda to react for fluffier pancakes). Pour onto hot griddle or pan over medium high heat. Flip them when the edges start to dry.

Serving Size: makes 4 pancakes
