Ingredients

1tsp coconut oil
1tsp olive oil
1 med onion, chopped
2 cloves garlic, chopped or crushed
57g leek, thinly sliced
54g carrot, diced
68g courgette (zucchini), large diced
88g parsnip, diced
103g cauliflower, in florets
74g aubergine (eggplant), diced
66g orange pepper (bell pepper), diced
6 cherry tomatoes, halved
64g mushrooms, quartered
2tsp garam masala
2tsp ground turmeric
225g Real Organics Authentic Korma sauce
Tips
Serve with brown basmati rice, mango chutney and poppadoms for a full meal (not included in the calorie count).
Directions
Heat olive oil and coconut oil in a large pan over a medium heat.
Fry onions and garlic.
Add all other vegetables, cover pan and cook on a low heat for 10 minutes
Add spices and korma sauce.
Cover and simmer for 20 minutes, or until the vegetables are of the desired consistency
Check consistency. If a little too thick, add some water.
