Ingredients

    1/4 cup quinoa
    1/2 cup water

    3 cups raw broccoli florets
    light drizzle of olive oil
    salt & pepper
    1/4 cup shelled edamame, cooked

    Sauce:
    1/2 tsp. sesame oil
    2 tablespoons tamari
    1 tablespoon rice vinegar
    1 tablespoon fresh satsuma juice (clementine juice)
    1 teaspoon white sesame seeds hulled
    1/2 teaspoon chili flakes
    1 clove of garlic minced
    1 green onion sliced
    1 inch fresh ginger grated

    kimchi if desired (calories include this)

Tips

You may use any vegetables really. Bok choy, red bell pepper, baby corn, beets, etc.


Directions

For the quinoa, combine the dry quinoa and water in a saucepan and bring to a boil. Reduce to a simmer, cover, and let cook until all of the water is absorbed. About 10 minutes. Turn off the heat and let set for 10 minutes before fluffing with a fork and serving. If there is leftover water after cooking, drain it off

For the edamame, I buy frozen. I steam them in the microwave and shell them for this recipe.

For the broccoli, preheat the oven to 400F, and wash. Cut into florets. Toss the chopped broccoli in a bowl with a light drizzle of olive oil (I used olive oil in a Misto) and season with salt and pepper. Lay the broccoli flat on a baking sheet lined with parchment and roast in the oven for about 25 minutes, or until browned on the edges and cooked through. You can flip them halfway, but I just let mine be and they turned out super.

For the sauce, combine all the ingredients in a small bowl and set aside until the rest of the meal is ready.

When ready to eat, toss into a bowl all together and enjoy
