Introduction
An extremely moist and tender bread reminiscent of a pound cake density but smoother with a "melt in your mouth" sensation. This dainty bread is hearty enough to hold up a solid portion of fruit spread or preserves but could also be enjoyed plain with a cup of herbal tea. Ingredients

Organic ingredients;
Sweet potatoes
Coconut flour
Coconut oil
Eggs, free run
Baking soda
Nutmeg
Cinnamon
Directions
Whisk all wet and dry ingredients each in a separate bowl.
Whisk wet to dry ingredients until well mixed. (about 2 minutes)
Pour into coconut oil greased parchment lined 8" x 4" pan (ideally glass)
Bake at 350 degrees for 40 minutes or until a toothpick inserted comes out clean.
Let cool for 15 minutes. Transfer to cooling rack.
Cut into 1/2 " slices once completely cooled.
Store in airtight container in fridge or freezer.
Will keep for 7 days in fridge or 30 days in freezer.
