Ingredients

    Extra Virgin Olive Oil, 2 tbsp.
    Hunts Tomatoe Paste NSA, 1 can
    Eggplant, fresh, 1 eggplant, unpeeled
    Zucchini, 2.5 cup
    Summer Squash
    Basil, 2 tbsp
    Garlic powder, 1.5 tsp
    Pepper, red or cayenne, 2 tsp
    Onions, raw, 1 medium
    Black Pepper
    Oregano

Tips

Try it cold over salad in the summer.


Directions

Chop onions and sauté with the EVO. Chop and add veggies in order zucchini, squash, eggplant. Top with the can of tom paste. Add seasonings and cover on medium low heat. Stir after about 5 min. Cook until veggies are still tough, but all flavors have mixed well.
