    1 Flatbread Pita
    2tbs. Grated Parmesan Cheese
    1/4 cup Italian Blend Cheese
    1tbs. Creamy Pesto
    Thin rounds from a small Red Potato
    *I did not count the calories for this because it's just a light brushing, so how would I measure?


-Slice potato into thin rounds and lightly brush with EVOO, sprinkle with a little pepper.
-Bake until hot flipping once.
-Put pesto sauce on flatbread, add Italian cheese, then potatoes, then sprinkle with parmesan.
-Bake pizza for about 10 min. a little more depending on how crisp you want it. Watch it.
-Let rest, slice, and serve!

NOTE: I made the recipe first to see how many calories this would be since I recreated it from wonderful pizza at a local market. After making it there are some changes that are totally possible and up to the individual.
*I used a creamy pesto from a packet. It has milk and EVOO, but you can use a lighter sauce, it would probably have fewer calories.
*How much cheese you want will depend on the size of your flatbread.
*I chose a flatbread that was soft and thick, another choice would have given me a crisper pizza and fewer calories.
*For a little crisper potatoes next time I will toss in a hot pan for a few seconds each side, will cut prep time too.

**Calories will depend on what products you use. This is just a great base for a VERY YUMMY pizza. I ate only half of one for dinner with a small salad, was satisfied, and ate the other half for lunch the next day. Warms up nicely. The BF also loved the flatbread pizza, but he piled his with pepperonni, of course... **
