Introduction
You can substitute different fruit in these, but keep the volume consistent and type for type... eg fresh or frozen blueberries for apples, or dried blueberries or raisins for craisins. You can also substitute mashed banana for applesauce, and change out the cinnamon for something else if you want. Nuts would also make a great addition. The streusel topping is totally optional. Banana with peanut butter and bacon bits would be awesome. Ingredients

Baked Oatmeal
3 cups rolled oats
½ cup brown sugar
2 tsp baking powder
½ tsp salt
1 tsp cinnamon
2 eggs
1 cup unsweetened applesauce
1 cup milk
3 tbsp butter, melted
1 tsp vanilla
1 chopped apple (skin on, chopped about the size of chocolate chips)
1/2 cup craisins
Top with Streusel
1/2 cup oats
1/4 cup flour (omit and add oats for gluten free)
1/2 tsp cinnamon
1/4 cup brown sugar
1/2 stick butter
Tips
When in doubt, UNDERMIX once wet and dry ings are together.
Directions
Line muffin tin with paper liners, spray liners with nonstick spray. Set aside.
In a large mixing bowl, combine rolled oats, brown sugar, baking powder, salt and cinnamon. Set aside.
In another mixing bowl, combine eggs, applesauce, milk and vanilla and whisk thoroughly.
Pour wet ingredients into dry ingredients and mix until JUST sticky throughout, add apples and craisins and mix in just slightly until mostly even. Overmixing makes flat tough muffins.
Scoop batter into prepared muffin tin.
Put all ingredients for Streusel in one bowl, mash together with a fork, adding more butter if needed. Add a few craisins to the mix, and sprinkle on top of muffins before they go in the oven. Lumpy/crumbly is fine.
Bake at 375°F for 30 minutes.
