Introduction
I was surprised by how good this recipe came out. I'm usually not a fan of bbq style sauces, but this one is not too sweet. The cooking is pretty hands-off, and the meat turns out nice and moist. Keep the cover on the whole time. I was surprised by how good this recipe came out. I'm usually not a fan of bbq style sauces, but this one is not too sweet. Ingredients
-
1 Pound of whole pork tenderloin (buy one that's just a bit over because you'll be trimming some of the fat away)
1/3 cup of ketchup
2 tbsp of cider vinegar
1.5 tbsp of packed light brown sugar
2 tsp smoked paprika
2 tsp chili powder
1 tsp ground cumin
0.5 tsp garlic powder
1/4 tsp salt
Tips
This recipe is from the book 400 Calorie Fix. I have found I cannot trust their calorie descriptions nor their portion sizes, so I have to input the ingredients here to double check.
Directions
Trim the pork and cut it into 2 inch pieces.
Mix all other ingredients together in a sauce pan or a dutch oven.
Add the pork, stir to coat and cook on medium-low for an hour. Stir occasionally.
Transfer the pork to a bowl, shred it using two forks, mix it with the sauce and serve.
