Ingredients

    4 Large Eggs
    Egg Whites (6 TBS)
    1/2 C Whole Milk
    Handful chopped spinach
    Diced red onion
    2 TBSP Pesto sauce
    8 oz Diced tomatoes
    4 oz Crumbled Feta Cheese
    2 Slices bacon, chopped

Tips

I pre-cooked the spinach and onions on a skillet before mixing into the rest of the dish.
Check often until golden brown. Usually between 35-45 minutes.
Can take out bacon to make it vegetarian.


Directions

Preheat oven to 350 degrees.
Mix all ingredients together and cook in pie dish (previously rubbed with pat of butter). Add pieces of bacon on top just before placing in oven.
