Ingredients

    1 C Lentils
    1 med Onion
    1 Green Pepper
    1 C chopped carrot
    1 C chopped celery
    1 C chopped radish
    1 C Ketchup
    1 T coconut oil
    4 C water
    Salt and pepper to taste

Tips

This can also be made in the slo-cooker. Follow directions up to the part where you reduce the heat to simmer. Pour everything into the slow cooker with 3 cups of water and the ketchup and cook on medium for 4 to 6 hours.
Delicious served over brown rice!


Directions

saute vegies in coconut oil on high heat until onions are translucent. Add lentils and 2 T of the ketchup. Stir together and cook until lentils start to wrinkle a bit. (about 2 minutes). Reduce heat and add half of the water. Simmer 30 minutes, stirring occasionally. Add the rest of the ketchup and 1 cup of water. Stir to combine and continue simmering for 15 to 20 more minutes, until lentils are soft. Sauce should be thin to medium constancy. Add more water if thinner sauce is desired. Add salt and pepper to taste.
