This salad is Paleo friendly. This salad is Paleo friendly.
Number of Servings: 8


    6 small beets, ends cut off
    1 medium apple ( I use Gala Apples)
    2 tbsp dijon mustard
    2 tbsp balsamic vinegar
    2 tbsp olive oil
    1 tsp black pepper
    1 tbsp dried dill weed.


Place beets in a medium sized pot and cover with cold water. Boil beets for around 45 minutes, or until they can be easily poked with a fork. Once they have finished cooking, rinse with cold water and set aside to cool. Grate beets with a cheese grater once cooled, then grate apple. Add to beets and apple mix. Toss and set aside.

Mix vinegar,mustard, olive oil and spices together and pour on beet mix. Toss and place in the fridge. Allow time for it to marinade (aprox 2 hours) and serve. Makes 8 servings.
